Directions
1. Step
Finely chop the white parts of the green onion. In a mixing bowl, combine the ground pork, chopped green onion, sugar, soy sauce, oyster sauce, ginger powder (or minced ginger), mirin, cooking oil (or sesame oil), and black pepper. Stir the mixture continuously in one direction using chopsticks until well combined.

Slice the potatoes thinly and place them in a microwave-safe bowl. Add 30ml of water. Cover and microwave for 8 minutes (based on 700W power). Mash the cooked potatoes while still hot, then transfer them to a mixing bowl. Add salt, wheat flour, and potato starch. Mix well until a smooth dough forms.
3. Step
Lightly wet a cutting board and place a sheet of plastic wrap over it to prevent sticking. Take a portion of the dough, roll it out slightly, and flatten it with your palm. Place a spoonful of the meat filling in the center. Fold the dough in half, sealing the edges completely to prevent bursting. Tuck the ends inward and press to shape into thick, sealed dumplings.
4. Step
Bring a pot of water to a boil and place a steaming rack lined with a cotton cloth inside. Arrange the dumplings on the rack, ensuring enough space between them for expansion.
