Directions
1. Step
Peel the potatoes and cut them into small pieces. Boil them for about 15 minutes or until soft, then mash them into a smooth consistency.
2. Step
Finely chop the onion, red chili, and coriander. Add them to the mashed potatoes.
3. Step
Add black pepper, salt, egg, cornstarch, and 1 tablespoon of cooking oil to the potato mixture. Mix well to form a dough.
4. Step
Transfer the dough into a piping bag. Cut the tip to make a small opening. Pipe out pieces approximately 2–3 cm long and set aside.
5. Step
Heat cooking oil in a pan over medium heat. Carefully drop the dough pieces into the oil and fry for about 8 minutes or until golden brown.
6. Step
Drain on a paper towel to remove excess oil and serve hot as a snack or side dish.
