Directions

  1. Grate the zucchini into a bowl. Add 1 tablespoon of salt, mix well, and let it sit for 7 minutes.

  2. After 7 minutes, add the oatmeal, Italian seasoning, rainbow peppercorn mix, cream cheese, chopped green onion, and eggs. Mix everything thoroughly and let it rest for 10 minutes.

  3. Mix in the shredded mozzarella. Divide the mixture into 4 portions and shape each into a rectangle on parchment paper.

  4. Bake in a preheated oven at 360°F (180°C) for 20 to 25 minutes or until golden brown.
