Directions
1. Step
Bring a pot of water to a boil. Add the peeled sweet potatoes and boil for about 13 minutes, or until they are 60-70% cooked (soft on the outside but still slightly firm inside). Allow the potatoes to cool completely. Once cooled, slice them thinly, then cut into 2cm-wide strips.
