Directions

Finely chop the onion and potatoes, then place them in a bowl.

In a pan, bring water to a boil and add 1 tsp salt. Add the chopped potatoes and boil for 1–2 minutes. Remove from heat and drain. Mix the boiled potatoes with the chopped onion, potato starch, and 1/2 tsp salt until well combined.

Heat cooking oil in a pan over low heat. Place half the potato mixture into the pan and press lightly with a spoon. Sprinkle with Parmesan cheese (if using). Fry until golden brown, then flip and fry the other side. Cover with a lid and cook for a few more minutes until fully cooked through. Alternatively, lightly oil another pan, transfer the potato mixture, and bake until golden brown.
