Directions

1. Step

In a bowl, combine 1 egg, 25 g sugar, 3 g yeast, and 145 g milk. Mix thoroughly with a spatula. Gradually add 300 g of bread or wheat flour and 3 g salt, then knead to form a dough. Set the dough aside to rest.

2. Step

Knead 30 g unsalted butter into the dough until fully incorporated. Cover the dough with plastic wrap and let it rise for 1 hour.

3. Step

Divide the dough into 6 equal parts. Shape each portion into a smooth ball and place them in a tin or baking tray. Cover with plastic wrap and allow them to rise for another hour.

4. Step

In a separate container, prepare the cream filling by mixing 40 g unsalted butter, 20 g powdered sugar, 30 g all-purpose or wheat flour, and 30 g milk until smooth. Set aside.

5. Step

After the dough has risen, create small cavities in each dough ball and fill them with the prepared cream filling. Cover again and let rest for 40 minutes.

6. Step

Brush the tops of the dough balls with an egg yolk wash. Preheat your oven to 170°C (340°F) and bake for 25 minutes. Remove from the oven, let cool slightly, and serve warm.
