Directions
1. Step
In a mixing bowl, combine 1 egg, 60 g of sugar, and 1 tsp of vanilla extract. Mix well. Add 80 ml of vegetable oil and 150 g of yogurt (or kefir/sour cream). Mix thoroughly until smooth. Stir in 1 tsp of lemon zest and mix well. Gradually add 1 tsp of baking powder and 300-320 g of flour. Mix until a soft dough forms. Knead lightly with your hands, adding a bit more flour if needed for consistency.

Divide the dough into 12 equal portions and roll each into a small ball. Place the dough balls into a container and cover with plastic wrap or polythene to rest.

Roll each ball in raw sugar until fully coated. Lightly score the tops with a knife to create a decorative pattern, if desired.
4. Step
Preheat your oven to 180°C (350°F). Place the sugar-coated dough balls on a baking tray lined with parchment paper. Bake for 20-25 minutes or until the cookies are lightly golden.
