Directions

1. Step

Heat a drizzle of oil and a knob of butter in a pan over medium heat. Sear the salmon fillets for 2–3 minutes on each side until lightly golden. Remove the fillets from the pan and set aside.

In the same pan, sauté the minced garlic and chopped onion (or shallot) until fragrant. Add the cherry tomatoes and cook until they soften, about 2–3 minutes.

Stir in the spinach and cook until wilted, about 2–3 minutes. Add the light cream, pesto sauce, Parmesan, and season with salt, pepper, paprika, and ground coriander. Stir well and let the sauce simmer gently for 3–4 minutes.
