Directions

1. Step

Chop the 2 potatoes finely and place them in a bowl. Add a little water and 1/2 teaspoon of salt. Mix well. Microwave the potatoes for 6 minutes. After microwaving, mash them thoroughly with a slotted spoon.

Finely chop 1 Cheongyang pepper (remove seeds if preferred for less spice) and 1 carrot. Add both to the mashed potatoes. Season the mixture with salt and chili powder (optional). Mix well.

Cut a large onion in half, peel the layers, and separate them into individual rings. Fill each onion ring with mozzarella cheese. Flatten a portion of the potato mixture into a small round patty. Place it on top of the onion ring, covering the mozzarella cheese. Press lightly to seal.

Prepare three bowls: Bowl 1: Flour, Bowl 2: Beaten eggs, Bowl 3: Breadcrumbs mixed with 2 tablespoons of parsley, Coat each patty in the following order: Flour → Beaten egg → Breadcrumb mixture

5. Step

Arrange the breaded patties in a bowl and lightly sprinkle oil over them. Fry in a preheated air fryer or oven at 170°C (340°F) for 12 minutes. Take the patties out, sprinkle a little more oil, and bake or fry for an additional 7 minutes (cooking time may vary based on the machine).
