Directions

1. Step

Blend 1½ cups (150 g) of oatmeal and 1 tsp of salt into a fine powder. Add the powdered oatmeal, 4 eggs, and ½ cup (120 ml) of milk into a blender. Blend until smooth.

2. Step

Heat a non-stick pan over medium heat. Pour 1 tablespoon of the batter into the pan to form small, round pancakes. Sprinkle a little dry oatmeal on top of each pancake before flipping. Cook until golden brown on both sides. Repeat until all batter is used.

3. Step

In a separate dry pan, lightly toast ½ cup (50 g) of oatmeal over low heat. Once toasted, transfer to a bowl and mix with ½ cup (120 g) of sugar-free peanut butter until combined.

4. Step

Spread the oatmeal and peanut butter mixture over a cooked pancake. Arrange banana slices on top in a circular pattern, then place another pancake on top to create a sandwich. Repeat for all pancakes.
