Directions

1. Step

In a bowl, combine the flour (420 g), baking powder (1.5 teaspoons), and butter (180 g). Use your hands to knead the mixture into a crumbly consistency.

In a separate bowl, whisk together the egg, sugar (80 g), vanilla sugar (a pinch), salt (a pinch), and sour cream or yogurt (3 tablespoons). Gradually add the flour mixture to the wet ingredients, kneading by hand to form a soft dough.

Divide the dough into two portions: 1/3 for the topping and 2/3 for the base. Wrap the smaller portion in plastic wrap and refrigerate.

Roll out the larger portion of dough for the base. Shape the edges into a slight border, then refrigerate.

Prepare the apple filling: Peel and mash the apples (3 pieces, approx. 500 g). Cook the mashed apples in a pan with butter (1 tablespoon), sugar (2 tablespoons), and jam (1 tablespoon) until soft. Let the filling cool, then spread it evenly over the chilled dough base.

Take the smaller portion of dough from the refrigerator and cut it into thin strips or pieces. Arrange these over the filling in a lattice or scattered pattern.

Bake in a preheated oven at 180°C (356°F) for 25–30 minutes or until golden brown.
