Directions

1. Step

Grate the zucchini and sprinkle it with a little salt. Let it sit for about 15 minutes to release excess moisture. Grate the potato, carrot, and 3 cloves of garlic together into a bowl.

2. Step

After 15 minutes, squeeze the zucchini to remove the excess liquid and add it to the grated vegetables. Grind the oatmeal into a fine powder using a blender, then mix it into the vegetable mixture. Add 150 g of grated cheese, 2 eggs, and chopped parsley. Season with dried Italian herbs, paprika, and a pinch of salt. Mix everything together.

3. Step

Knead the mixture by hand until it forms a dough-like consistency. Heat some oil in a pan and shape the dough into small fritters or patties. Fry them until golden brown on both sides. Meanwhile, finely chop the dill and place it in a bowl with 200 g of Greek yogurt. Crush 2 cloves of garlic and mix it in. Add salt and pepper to taste.

4. Step

Serve the fried fritters with the garlic-yogurt sauce for dipping.
