Directions
1. Step
Press the tofu to remove excess water. Once drained, crumble the tofu into a mixing bowl. Crack 4 eggs into the bowl, add 4 pinches of salt, and mix thoroughly until well combined.
2. Step
Slice the spam into 8 equal pieces and rinse with hot water to remove excess salt. Heat a pan with a little cooking oil. Pour half of the tofu-egg mixture into one side of the pan and fry until golden. Flip carefully and cook the other side. Repeat with the remaining mixture. Remove the cooked tofu-egg patties and set them aside. In the same pan, fry the spam slices until crispy.
3. Step
Lay one sheet of seaweed flat on a clean surface. Place one tofu-egg patty on the seaweed. Add 2 lettuce leaves, a layer of pickled radish, and 4 slices of spam. Roll the seaweed tightly, securing the filling. Lightly brush the roll with sesame oil for added flavor.
4. Step
Slice the roll into bite-sized pieces. Serve with a side of Bulldog Mayo Sauce for dipping. Mix mayonnaise and Bulldog sauce for the perfect tangy complement. Optionally, add a touch of wasabi for a spicy kick.
