Directions

Peel and cut the potatoes (500 g, approximately 3 medium-sized) into equal-sized pieces. Place the potatoes in a bowl and cover with water. Boil for about 13 minutes until tender. Drain the water, then mash or mix the cooked potatoes thoroughly.

Stir the mixture well, blending it into a smooth consistency using an immersion blender or similar tool. Continue stirring while turning off the stove. The mixture should resemble a creamy texture. Note that it will thicken as it cools.

Transfer the cooled potato mixture to a piping bag. Fry the Paccheri pasta noodles in oil over medium heat until crispy and golden brown. Let the fried Paccheri cool slightly, then fill them with the potato mixture using the piping bag.
