Directions

  1. Soak one piece of kelp in 350ml of water for 30 minutes to make kelp water. Meanwhile, soak 30g of glass noodles in a bowl of hot water to soften.

  2. In a bowl, mix 2 tablespoons of red pepper flakes, 1/2 tablespoon of gochujang, 1 tablespoon of fish sauce (or soy sauce), 1 tablespoon of soy sauce, 1 tablespoon of water, 1 tablespoon of minced garlic, and a dash of black pepper to create the seasoning sauce.

  3. Dice the green onions. Chop the tofu into small cubes. Wash 200g of Spam thoroughly in hot water to reduce excess salt, then place the Spam on three layers of tissue paper to drain.

  4. In a large pan, layer the bean sprouts at the bottom. Add the chopped green onions and half of the seasoning sauce. Place the tofu and Spam on top, with the Spam in the center. Add the softened glass noodles around the Spam. Pour the remaining seasoning sauce over the noodles and add enough kelp water to cover the ingredients.

  5. Cover the pan and bring to a boil over high heat for 3 minutes. Once boiling, reduce the heat to medium and simmer for 10 minutes. After 10 minutes, remove the lid and gently stir the ingredients with a spoon. Serve hot.
