Directions
1. Prepare the Cucumbers
Trim the ends of the cucumbers. Using a peeler, slice them into thin ribbons and set aside.
2. Make the Dressing Base
In a large plate or bowl, combine spring onion, brown sugar (if using), gochujang, mild chili powder, chopped ginger, chopped garlic, sesame seeds, soy sauce, and rice vinegar.
3. Heat the Oil
In a small saucepan, heat the neutral oil over medium heat until hot but not smoking.
4. Pour the Hot Oil
Carefully pour the hot oil over the dressing mixture. The heat will bloom the spices and release their aroma.
5. Mix the Dressing
Stir the dressing ingredients well to combine thoroughly.
6. Toss the Cucumbers
Add the cucumber ribbons to the plate and gently toss until they’re well coated with the dressing.
7. Garnish
Sprinkle fresh cilantro and, if desired, extra chili powder on top.
8. Serve
Let the salad sit for 5–10 minutes to allow the flavors to meld. Serve and enjoy!
