Directions
-
Peel and thinly slice 1 potato into rounds. Set aside for later use.
-
Finely chop the remaining potato and place it in a mixing bowl. Add the chopped Cheongyang peppers, carrot, and shrimps to the bowl. Season the mixture with 1 teaspoon salt, then add 2 tablespoons potato starch and chili powder (if desired). Mix everything well until evenly combined.
-
Take each potato round and lightly coat one side with potato starch. Place a small portion of the potato mixture onto the starch-coated side of the round. Repeat this for all slices.
-
Heat a generous amount of oil in a pan over medium heat. Carefully place each prepared potato round into the pan, mixture-side down. Fry until golden and crispy on both sides.
-
Remove and place on paper towels to drain excess oil. Serve warm and enjoy!
