Directions
1. Step
In a large bowl, combine lukewarm water, yeast, sugar, powdered milk, salt, egg white, olive oil, butter, and flour. Knead the mixture until smooth using a mixer with a dough hook or by hand until the dough is well combined and elastic. Cover the bowl with a clean cloth or plastic wrap and let it rise for 1 hour until doubled in size.

After the dough has risen, divide it into portions weighing around 150g each. Shape each portion into a roll, then cover and let rest for another 5 minutes. Flatten each roll slightly, then place it on a lined baking sheet. Cover and allow the rolls to rise for another 30-40 minutes. Preheat your oven to 180°C (350°F). In a small bowl, mix the egg yolk with a teaspoon of cream or milk. Brush this mixture over the rolls. Combine the Parmesan, garlic powder, and dried oregano, then sprinkle this mixture on top of the rolls. Bake the rolls in the oven for 15-20 minutes until golden brown.

Cut the chicken into small slices. In a frying pan, heat olive oil, and season the chicken with salt, pepper, coriander, garlic powder, and dried parsley. Saute the chicken until fully cooked and golden. Set aside.

In a small bowl, mix mayonnaise, Greek yogurt (or crème fraiche), lemon juice, olive oil, garlic powder, salt, and pepper. Whisk the mixture until smooth and creamy.

Slice the baked rolls horizontally, then spread a layer of the cream sauce on the bottom half. Layer with fried chicken, lettuce, tomato, onion, cheese, and cold cuts. Place the top half of the roll on and wrap each sandwich in parchment paper. Serve and enjoy your homemade rolls!
