Directions

1. Saute the Vegetables

In a large pan over medium heat, sauté the carrots, spring onions, and mushrooms for 3–4 minutes until softened.

2. Add the Tofu

Add the crumbled tofu and cook for another 2 minutes, mixing well.

3. Mix in Rice and Seasonings

Stir in the cooked rice, rice vinegar, and soy sauce. Mix thoroughly.

4. Thicken the Mixture

Sprinkle cornstarch over the mixture and cook for another 1–2 minutes while stirring until slightly thickened. Remove from heat and let it cool slightly.

5. Blanch the Cabbage Leaves

Bring a large pot of water to a boil. Blanch the Napa cabbage leaves for about 1 minute until just softened. Drain and gently pat dry with a clean kitchen towel.

6. Fill and Roll the Cabbage Leaves

Lay a cabbage leaf flat on a clean surface. Place 2–3 tablespoons of filling near the base. Fold in the sides and roll tightly to enclose the filling. Repeat with the remaining leaves and filling.

7. Pan-Fry the Rolls
