Directions

  1. Combine 200 g white chocolate with 100 g hot full cream (30% fat). Stir until smooth and sticky. Add 150 g very cold full cream (30% fat) to the mixture and mix well. Refrigerate the chocolate cream to cool and thicken slightly.

  2. Crush 180 g biscuits into crumbs and mix with 80 g melted butter until combined. Press the mixture into the base of your serving dish or pan. Refrigerate to set.

  3. Remove the chocolate cream from the fridge and fold in 400 g cream cheese and 1 teaspoon vanilla extract. Mix until smooth.
    Spread the cream mixture over the biscuit base. Refrigerate again to chill.

  4. In a saucepan, combine 100 g red fruit, 40 g sugar, and 2 tablespoons lemon juice. Heat gently until the fruit softens and the sugar dissolves, creating a sauce. Let it cool slightly.

  5. Remove the dessert from the fridge and top it with the red fruit sauce. Spread evenly for a beautiful finish. Serve chilled and enjoy!
