In a large bowl, combine the flour (320 g), cornstarch (160 g), and a pinch of salt. Mix well. Add the melted butter (200 g) and mix thoroughly using your hands until the mixture is crumbly. Incorporate the sour cream or yogurt (2 tbsp) and the egg yolk (1 pc). Mix again with your hands until well combined. Gradually add water (30-50 ml) and knead the dough until smooth. Let it rest for 10-15 minutes.

In a blender or food processor, combine walnuts (200 g) and raisins (150 g). Blend until finely chopped and well mixed. Set aside. Assemble the Pastries:

Roll out the dough on a floured surface to a thin sheet. Use a round cutter (10 cm in diameter) to cut out circles of dough. Place 1 spoonful of the walnut and raisin mixture onto the center of each round. Shape the dough into a ball around the filling and seal the edges. Use tongs or a fork to create decorative patterns on the surface of each ball.
