Directions

1. Step

Peel and cut the potatoes into pieces. Boil them for 15 minutes until tender.

Mash the boiled potatoes thoroughly. Add black pepper, salt, cooking oil, and cornstarch to the mashed potatoes. Mix well to form a smooth dough.

Place the dough in a plastic bag and roll it into a thin, even sheet. Cut the plastic bag to release the dough sheet. Slice the sheet into squares by cutting lengthwise and crosswise.

4. Step

Use the tip of a knife to create a decorative mark on the top of each square. Fry the cookies in medium-heat oil for approximately 9 minutes or until golden brown. Remove them from the oil and sprinkle dried scallions on top for garnish.
