Directions

1. Step

In a mixing bowl, whisk together 2 eggs, 70g sugar (or allulose), and 1g salt until well combined. Add 150ml milk and 10g vegetable oil, then mix. Sift in 150g cake flour and 4g baking powder, then stir until smooth. Add vanilla extract (if using) and mix well. Cover and refrigerate the batter for 30 minutes to 1 hour.

2. Step

In a saucepan, whisk together 2 eggs, 30g sugar (or allulose), and a pinch of salt until smooth. Add 200ml milk and 20g cornstarch, then mix thoroughly. Place the pan over medium heat, stirring constantly. Once the mixture thickens, add 10g unsalted butter and stir until melted. Remove from heat and let the custard cool.

3. Step

Heat a non-stick pan over low heat and lightly grease with oil. Pour a small amount of batter and spread thinly into a round shape. Cook until the top is set (no need to flip). Remove from the pan and repeat with the remaining batter. Pipe or spoon the custard filling onto each crepe in a line. Gently roll the crepe around the custard to form a tube. Serve and enjoy!
