Directions

1. Step

Place the oyster mushrooms in a bowl with a little water and microwave for 3 minutes. Remove from the microwave and soak the mushrooms in cold water to cool.

Pat the mushrooms dry with a tissue. Flatten the mushrooms and slice them lengthwise. Pat dry again, then season lightly with salt and chili powder.

Soak a piece of rice paper in lukewarm water until soft. Place mozzarella cheese and one seasoned oyster mushroom on the rice paper, then wrap it tightly. Use a knife to make small holes in the wrapped rice paper.

Coat the wrapped mushrooms in flour, then dip them in egg whites, followed by bread crumbs. Repeat the egg white and bread crumb coating for extra crispiness.

Place the coated mushrooms in a bowl, drizzle with olive oil, and bake in an air fryer at 170°C (340°F) for 8 minutes. Remove from the air fryer, drizzle with more olive oil, and bake for an additional 5 minutes.

To prepare the sauce, heat a pan over medium heat. Add soy sauce, honey, water, and minced garlic. Cook until the mixture thickens slightly and the garlic is fragrant. Add the mushrooms to the pan, tossing until the sauce evenly coats them.
