Directions

1. Step

In a bowl, combine 1 egg, 25g sugar, 140g milk, and 3g yeast. Mix thoroughly using a spatula. Add 300g bread flour and 3g salt. Knead into a smooth dough, cover with a lid, and let rest for 20 minutes.

Knead the rested dough again, this time incorporating 30g unsalted butter until smooth and elastic. Cover the dough with plastic wrap and let it rise for 1 hour, or until doubled in size.

3. Step

For the filling, mix 75g shredded coconut, 30g milk powder, 35g powdered sugar, 30g unsalted butter, and 1 egg in a separate bowl. Stir until evenly combined.

4. Step

Divide the dough into 6 equal parts and shape each piece into a round ball. Place all dough balls together, cover with plastic wrap, and let them rest for 15 minutes.

5. Step

Take one dough ball and flatten it with a rolling pin. Spread a portion of the prepared filling onto the dough and roll it up (refer to video or instructions for desired design). Repeat for all pieces.

6. Step

Arrange the prepared rolls on a baking tray lined with parchment paper. Cover with plastic wrap and let them rise for another 40 minutes. Brush the tops with egg wash.
