Separate the yolks and whites of 5 eggs. In a mixing bowl, combine the egg whites with a pinch of salt, a pinch of citric acid, 8 g vanilla sugar, and 125 g powdered sugar. Beat until stiff peaks form. Finely blend 150 g hazelnuts and gently fold them into the egg white mixture. Pour the mixture into a 42x32 cm baking tray lined with parchment paper. Bake in a preheated oven at 175°C (375°F) for 45 minutes. Allow the base to cool completely.

In a saucepan, whisk together 3 eggs, 190 g sugar, 10 g corn starch, and 250 g cherries until smooth. Heat the mixture over medium heat, stirring continuously until it reaches a boil and thickens. Remove from heat, cover with cling film to prevent a skin from forming, and let it cool.
