Directions
1. Step
In a large mixing bowl, combine cake flour, bread flour, granulated sugar, salt, and baking powder. Add unsalted butter and milk (110 g), then mix until a smooth dough forms. Divide the dough into round balls about 5 cm in diameter. Arrange the dough balls on a baking tray. Brush the tops with 1 tsp milk and sprinkle with 1 tbsp granulated sugar.
2. Step
Preheat your oven to 210°C (410°F). Bake the biscuits for 15–20 minutes, or until golden brown.
3. Step
In a small pan, combine blueberries, granulated sugar (50 g), and lemon juice. Heat the mixture over medium heat, stirring occasionally, until it thickens into a syrupy consistency. Transfer the sauce to a small bowl and let it cool slightly.
4. Step
Serve the warm biscuits with the blueberry sauce drizzled on top or on the side for dipping.
