Directions
1. Step
In a mixing bowl, whisk together 1 egg yolk, 18g sugar, 50ml milk, and 1 tsp vanilla extract until well combined. Heat a pan with water and place the mixing bowl over it (double boiler method). Stir continuously until the mixture is warm. Add 100g mascarpone cheese and mix until smooth.

In a separate bowl, combine 2 egg yolks, 1 tbsp water, and 35g cake flour, mixing well. In another bowl, beat 3 egg whites with 40g sugar until soft peaks form. Gently fold the egg yolk mixture into the whipped egg whites, then incorporate the mascarpone mixture from Step 1. Mix until just combined.
3. Step
Lightly grease a pan with oil and heat over low heat. Pour a small amount of batter into the pan and cook for about 6 minutes, or until set and golden brown. Repeat with the remaining batter.
