Directions

1. Step

In a bowl, mash the 300 grams of steamed sweet potatoes using a slotted spoon. Add 20 grams of unsalted butter and mix until smooth. Next, add 60 grams of rice flour and mix well. Season lightly with a pinch of salt and stir until fully combined.

2. Step

Divide the sweet potato mixture into 9 equal portions (about 20 grams each). Roll each portion into a small ball, then gently flatten them. Arrange them in a bowl.

3. Step

Sift 30 grams of powdered sugar into a bowl. Add 8 grams of egg white (about 1/2 teaspoon) and mix thoroughly. Add 2–3 drops of lemon juice and continue mixing until smooth.

4. Step

Top each flattened sweet potato ball with the prepared mixture, spreading it lightly over the surface. Instead of apricot jam, use kumquat jam and spread it thinly over the top. Place the sweet potato balls in an air fryer and cook at 160°C for 20 minutes.
