Directions
1. Step
Peel the sweet potatoes and soak them overnight. Mix the sweet potatoes with 2 tablespoons of flour, ensuring the consistency is slightly sticky. If needed, adjust with additional flour. Add the remaining 2 tablespoons of flour and mix thoroughly until the dough is cohesive and sticky.
2. Step
Place baking paper on a flat surface and press the sweet potato dough onto it with your hands. Use a rolling pin to flatten the dough evenly. Trim any excess dough to create a neat rectangular shape. Cut the dough into 15 equal-length strips using a knife.
3. Step
Create cone shapes using baking paper or white paper. Wrap each strip of sweet potato dough around the cones, forming a spiral pattern. Arrange the wrapped cones in a container and brush them lightly with melted butter. Preheat your air fryer to 170°C (340°F). Air fry the cones for 18 minutes. After 18 minutes, turn the cones over and air fry for an additional 5 minutes. Remove the cones from the air fryer and let them cool slightly.
4. Step
In a saucepan, heat the milk over medium heat until warm. In a separate bowl, whisk together the egg yolks, sugar, and flour until smooth. Gradually pour the warm milk into the egg mixture, whisking constantly to avoid lumps. Return the mixture to the saucepan and cook over low heat, stirring continuously, until thickened. Add a few drops of vanilla extract and mix well. Allow the custard to cool.
5. Step
Carefully remove the sweet potato cones from the baking paper molds. Use a piping bag or spoon to fill the cones with custard cream.
