Directions

  1. In a large bowl, combine 400 ml slightly warm water, 7 g dry yeast, and 60 g sugar. Stir well until the yeast dissolves. Add the 125 g yogurt, 60 ml sunflower seed oil, grated lemon zest, grated orange zest, and 800 g flour. Mix until the dough starts to form, then add a pinch of salt and 2 tbsp butter. Knead thoroughly until smooth.

  2. Lightly oil a large bowl, place the dough inside, cover it with plastic wrap and a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size. Once risen, roll the dough out and shape it into a round. Use a cutter to create doughnut shapes and make a small hole in the center. Let the doughnuts rise for another 15 minutes.

  3. Heat sunflower oil in a deep pan for frying. Fry the doughnuts in small batches over medium heat until golden and firm on both sides. Remove and drain on paper towels, then coat each doughnut in granulated sugar while still warm.
