Directions
1. Step
In a pan, combine 100 grams of sugar, 30 grams of butter, 600 grams of strawberries, and 1 tablespoon of cornstarch. Cook the mixture over medium heat until it thickens. Set aside to cool.
2. Step
In a mixing bowl, whisk together 1 egg, 1 egg yolk, 80 grams of sugar, vanilla extract, and a pinch of salt. Once combined, add 100 grams of softened butter and mix well. Gradually add 1 teaspoon of baking powder and 280 grams of flour, mixing until a soft dough forms. If the dough is too sticky, add a little more flour as needed and mix with your hands until smooth.
3. Step
Divide the dough into two portions. Wrap one portion and place it in the freezer for later use.
4. Step
Roll out the remaining dough to fit a 22 cm baking pan. Line the pan with the dough, pressing it into the edges and sealing the bottom. Pour the cooled strawberry filling over the dough. Remove the dough from the freezer, roll it out, and use it to cover the filling. Seal the edges.
5. Step
Preheat the oven to 180°C (356°F). Bake the assembled pie for 30-35 minutes, or until the crust is golden brown. Allow the pie to cool before serving.
