Directions
1. Step
Chop the red, yellow, and green bell peppers, and the carrot. Heat cooking oil in a pan, add the tofu pieces, and fry over medium heat until golden brown. Remove and let cool.
2. Step
In a bowl, combine peanut butter, soy sauce, lemon juice, water, and honey. Mix well until smooth. If too thick, add a bit more water or lemon juice to adjust consistency.
3. Step
In a bowl, whisk eggs, salt, oats, milk, and spinach until well combined. Heat a pan with cooking oil, pour 1/3 of the batter, and spread evenly. Cook until the top is set, then flip to cook the other side. Repeat for the remaining batter.
4. Step
Place a spinach tortilla on a flat surface. (Optional) To prevent tearing, place a sheet of soaked rice paper over the tortilla. Layer the chopped bell peppers, carrot, fried tofu, and crab meat. Roll tightly, then wrap in cling film to keep it secure. Cut in half and serve with peanut sauce for dipping.
