Directions
1. Step
In a bowl, beat 2 eggs with a pinch of salt and chili powder. Set aside. Chop the garlic finely. Cut the green onion in half, then chop it, keeping the white and green parts separate. If using chicken, chop it into small pieces, soak it in water for 10 minutes, then pat dry with a tissue. Lightly coat with flour. (Optional)

Bring water to a boil in a pan. Add the ramen noodles and cook for 1 minute 30 seconds or until slightly tender. Drain the noodles using a sieve and set them aside.

Heat sesame oil in a pan over medium heat. Add the white part of the green onion and sauté until golden brown. Then, add the green part. Add the garlic and cook until golden and fragrant. In a bowl, mix together: 1.5 - 2 tbsp sesame oil, 1/2 tbsp oyster sauce, 1/2 tbsp sugar, 1/2 tbsp pepperoncino, 3 tbsp water. Pour the sauce into the pan and let it simmer briefly. Add the boiled ramen noodles and toss well to coat in the sauce.

Push the noodles to one side of the pan. Add a little oil to the empty side. Pour in the beaten eggs and scramble them until fluffy. Mix the scrambled eggs with the noodles and stir-fry until evenly combined. Remove from heat and plate the dish. Sprinkle with Grano Padano cheese for extra flavor.
