Directions

  1. Cut the eggplants into 12 pieces. Make a small slit in each piece and lightly sprinkle with salt. Gently rub the salt into the eggplants and let them sit for 10–15 minutes. Once the eggplants release water, they are properly salted.Pat them dry thoroughly.

  2. In a bowl, combine 60 ml of water and 2 tablespoons of flour to form a batter. Coat the sliced eggplants evenly with the batter.

  3. Heat a pan with cooking oil over medium flame. Fry the battered eggplants until golden brown, flipping them occasionally for even cooking. Add more oil as needed to ensure all pieces cook thoroughly. Once fried, the eggplants should appear shiny and juicy.
    Remove them from the pan and place them in a bowl.

  4. In a separate bowl, mix the soy sauce, vinegar, minced garlic, honey, and water to prepare the sauce. Add Cheongyang chili for extra heat.
    Pour the sauce into a pan and add the fried eggplants. Simmer gently, allowing the eggplants to absorb the sauce and cook well.
