Directions

  1. In a mixing bowl, combine 1½ cups (150 grams) oatmeal, 3 tablespoons chia seeds, and 1/4 cup (15 grams) unsweetened cocoa powder.

Add 1/3 cup (80 ml) espresso coffee, 1½ cups (360 ml) milk of your choice, and 1/4 cup (60 ml) maple syrup to the dry mixture. Stir well, then refrigerate for 4 hours.

In a separate bowl, blend 1 cup (200 grams) mascarpone or cream cheese, 1/3 cup (100 grams) Greek yogurt, 2 tablespoons peanut butter, and 2 tablespoons maple syrup until smooth.

Divide the refrigerated oatmeal mixture evenly into two glasses. Spoon the mascarpone mixture over the top, spreading it evenly. Finish with a sprinkle of unsweetened cocoa powder.
