Directions
1. Step
In a large pot over medium heat, add a little vegetable oil. Add the meat and sear until it changes color. Stir in 200 g of chopped onion, bay leaves, cinnamon sticks, cardamom, coriander seeds, black pepper, and cumin seeds. Cover with hot water and cook over medium heat for about 1.5 hours, or until the meat is tender.

In a separate pan, heat a little vegetable oil over medium heat. Add 1 tablespoon of butter and stir in the orzo pasta. Toast the orzo until golden brown, then remove from the pan and set aside.

Using the same pan, fry 180 g of chopped onion. Add 15 g (1 tsp) of garlic and 140 g of chopped bell pepper. Stir in 50 g of tomato paste and 350 g of chopped tomatoes.

After 2 minutes, add chickpeas (if using), salt, black pepper, and paprika. Stir in the toasted orzo and pour in the meat broth. If preferred, you can skip frying the orzo and add it directly to the broth.

Cook over medium heat for 20 minutes, stirring occasionally. Garnish with fresh parsley before serving.
