Directions
1. Prepare the Falafel Mixture
In a food processor, combine the chickpeas, parsley, cilantro, cumin, coriander, cinnamon, chili powder (if using), salt, and flour. Pulse until well mixed but still slightly coarse. Transfer the mixture to a bowl, cover, and refrigerate for 30 minutes to firm up.
2. Cook the Falafel
Heat olive oil in a large non-stick pan over medium-high heat. Scoop about ¾ cup of the falafel mixture onto a piece of pita bread and press it evenly. Place the pita in the pan, falafel side down.
