Directions

1. Prepare the Falafel Mixture

In a food processor, combine the chickpeas, parsley, cilantro, cumin, coriander, cinnamon, chili powder (if using), salt, and flour. Pulse until well mixed but still slightly coarse. Transfer the mixture to a bowl, cover, and refrigerate for 30 minutes to firm up.

2. Cook the Falafel

Heat olive oil in a large non-stick pan over medium-high heat. Scoop about ¾ cup of the falafel mixture onto a piece of pita bread and press it evenly. Place the pita in the pan, falafel side down. Cook for 5–7 minutes, until the falafel is browned and the pita edges are crispy. For extra crispiness, flip the wrap and cook the other side for 2 more minutes.

3. Assemble the Wraps

Remove the wrap from the pan. Top with garlic tahini sauce, pickles, tomatoes, onions, and fresh parsley. Fold and serve immediately.
