In a small bowl, mix 45 grams of water with 4 grams of powdered gelatin. Set aside to bloom.

In another bowl, combine 250 grams of coconut milk and 40 grams of sugar. Heat the mixture to 60°C (140°F) while stirring. Add the bloomed gelatin to the warmed coconut milk mixture and stir until fully dissolved. Mix in 150 grams of mango puree until well combined. Divide the mixture equally into 4 serving bowls. Cover each bowl with plastic wrap and refrigerate until set.

In a small bowl, mix 15 grams of water with 2 grams of powdered gelatin. Set aside to bloom. In another bowl, combine 150 grams of coconut milk and 20 grams of sugar. Heat the mixture to 60°C (140°F) while stirring. Add the bloomed gelatin to the warmed coconut milk mixture and stir until fully dissolved.

Pour the coconut mixture over the set mango-coconut layer in each bowl. Optionally, top with additional mango puree for garnish. Chill in the refrigerator until the second layer is set. Serve cold.
