Directions
1. Step
In a mixing bowl, crack 3 eggs and add 1 cup (240 ml) of milk. Using a hand mixer, blend the mixture until smooth. Add 2 tablespoons of flax seeds and 2 tablespoons of psyllium. Mix again until well combined.
2. Step
In a pan over medium heat, lightly toast the almonds, peanuts (or Chinese almonds), and cashews until fragrant. In a blender, grind the toasted nuts along with 1 teaspoon of baking powder and a pinch of salt until finely blended.
3. Step
Gradually fold the ground nut mixture into the egg mixture, stirring gently until well incorporated. Divide the batter evenly into two greased glass bowls. Bake in a preheated oven at 360°F (180°C) for 40–45 minutes, or until golden brown and set. Let cool before serving. Enjoy!
