Directions

1. Step

Place diced sweet pumpkin in a microwave-safe bowl and cook for 3 minutes. Stir, then microwave for an additional 4–5 minutes (based on 700W) until soft.

Heat a pan with cooking oil and sauté 1 tbsp minced garlic and half of the chopped onion until fragrant. Add duck tenderloin and cook until browned. Pour in 2 tbsp cooking wine and continue cooking. Once fully cooked, cut the duck into small pieces using scissors.

Add 1 tbsp soy sauce, 1 tsp sugar, 1 tbsp paprika powder, and 1 tbsp curry powder. Stir well. Sprinkle 0.5 tbsp oregano and black pepper to taste. Turn off the heat and set aside.

In a bowl, mix mayonnaise, sugar-free yogurt, honey mustard, lemon juice, and black pepper until smooth.

Lay a 10-inch tortilla flat and sprinkle with mozzarella cheese. Add cooked duck, sweet pumpkin, bell pepper, cherry tomatoes, and a handful of cabbage. Drizzle 2 tbsp yogurt sauce over the ingredients. Place 4 romaine lettuce leaves on top and fold the tortilla tightly into a burrito.

Heat a pan with cooking oil and toast the burrito until golden brown on all sides. Slice with a serrated knife and serve warm.
