Directions
1. Step
Add 2 cups (200 g) of oatmeal, 1 tablespoon of baking powder, a pinch of salt, and 2 tablespoons of cornstarch into a blender. Blend until the mixture is smooth and combined. Set aside.

In the same blender, combine 2 tablespoons of flaxseed with 1 cup (240 ml) of warm water. Let it rest for a few minutes to thicken. In a separate bowl, whisk together 3 eggs, 1/4 cup (50 g) of stevia, and 1 teaspoon of vanilla extract. Add 1/3 cup (80 ml) of vegetable oil and 1/3 cup (80 ml) of milk to the egg mixture. Mix well until smooth.

Gradually mix the wet ingredients into the dry oatmeal mixture until fully combined. Use a spoon or spatula for a smooth batter. Fold in a handful of halved strawberries into the batter.
4. Step
Pour the batter into a greased or parchment-lined 7-inch (18 cm) baking dish. Arrange a few strawberry halves on top for decoration. Bake in a preheated oven at 360°F (180°C) for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
