Directions
1. Step
Cut the red bean jelly into small, pea-sized pieces. Peel and chop the sweet pumpkin into small chunks. Place the pumpkin in a microwave-safe bowl, add a little water, and microwave for about 7 minutes at 700W until soft.

While the pumpkin is still hot, mash or blend it into a smooth puree. In a mixing bowl, combine the mashed pumpkin with glutinous rice flour, sugar, and salt. Mix thoroughly until a smooth dough forms. Shape the dough into small rounds, then create a small indentation in each piece and fill it with red bean jelly. Seal the dough around the filling and shape it into balls.

Bring a pot of water to a boil. Gently drop the rice cakes into the boiling water and cook for about 5 minutes or until they float to the surface. Remove the cooked rice cakes and immediately transfer them to a bowl of cold water to cool. Once cooled, drain and lightly coat with a small amount of cooking oil to prevent sticking.
