Directions
1. Step
In a large pot, bring 1.5 liters of water to a boil. Add 5g (0.5 tbsp) salt and 90g pasta noodles. Cook for about 7 minutes or until the pasta is al dente. Drain the pasta and set aside.
2. Step
Heat 5 tablespoons of olive oil in a large pan over low heat. Add the finely chopped garlic and sauté gently until fragrant and cooked (avoid browning). Stir in 1 teaspoon of crushed red pepper and cook for another minute.
3. Step
Add the drained pasta to the pan, tossing it in the garlic oil mixture. Cook on medium heat for a minute. If there's some moisture left, turn off the heat at this point. Stir in the parsley (if using) and Parmesan cheese. Taste, and if needed, add a pinch of salt.
4. Step
Plate the pasta and top with extra Parmesan cheese and chopped garlic for added flavor. Serve immediately.
