Directions

In a bowl, whisk together 1 egg, 20 g sugar, 15 g cornstarch, and 125 ml milk until smooth. Heat the mixture on the stove over medium heat, stirring constantly, until it thickens. Once the mixture becomes sticky and thick, remove it from the heat. Transfer the pastry cream to a bowl, cover with plastic wrap to prevent a skin from forming, and refrigerate until cool.

In a mixing bowl, cream together 50 g soft butter and 50 g sugar until light and fluffy. Add 1 egg, 80 g almond powder, 100 g of the prepared pastry cream, and a few drops of bitter almond extract. Mix until smooth and well-combined.

Roll out 500 g puff pastry into two equal-sized rounds. Place one round on a baking sheet lined with parchment paper. Spread the almond filling evenly over the pastry, leaving a small border around the edges. Cover with the second pastry round and press the edges firmly to seal.
