Directions
1. Step
In a bowl, soften 50g of unsalted butter. Add 250g of bread flour and mix until combined. In a separate bowl, mix 120ml cold water, 3g salt, and 10g sugar until dissolved. Pour the liquid mixture into the flour mixture and knead for about 3 minutes. Cover and let the dough rest for 15 minutes.

Once the dough is soft, divide it into four equal parts. Flatten each piece into a 30cm x 25cm rectangle. Spread 120g of room-temperature butter evenly over the dough. Fold the dough into thirds, dust lightly with flour, and roll it out to a length of 45cm.
3. Step
Perform a three-fold (letter fold), then roll the dough out again to 45cm. Repeat the three-fold process twice more, rolling the dough back to 45cm each time. After the final fold, roll the dough out one last time to 45cm.
4. Step
Trim the edges and cut the dough into three equal strips. Further divide each strip into four equal pieces. Make five slits in each piece, then apply egg wash to one sheet. Spread strawberry jam on one sheet and chocolate jam on another. Cover with the cut sheet, aligning the edges evenly. Brush the top with egg wash. Bake in a preheated oven at 200°C (392°F) for 10 minutes. Reduce the temperature to 180°C (356°F) and bake for another 20 minutes.
