Directions

  1. In a bowl, mix the butter, powdered sugar, salt, and Earl Grey tea leaves until well combined. Add the egg mixture (yolk and white) and continue mixing. Gradually incorporate the rice flour and almonds, mixing thoroughly. Divide the dough into two portions, wrap in plastic bags, and let it rest in the fridge.

  2. Heat the heavy cream, Earl Grey tea leaves, and sugar in a pan until warm. Let it cool slightly. In another bowl, mix the cream cheese, sugar, rice flour, and egg until smooth. Combine the cooled tea mixture with the cream cheese mixture, ensuring a smooth consistency.

  3. Roll the rested dough and cut into rounds measuring 15cm × 4.5cm. Line a baking pan with one dough round on the bottom and place another piece around the sides. Preheat the oven to 180°C and bake the dough for 15–20 minutes until lightly golden.

  4. Pour the prepared cream mixture into the baked crust. Lower the oven temperature to 150°C and bake for 40–45 minutes until set.
