Directions

Sieve 50 grams of cake flour into a bowl. Heat 50 grams of cooking oil in a pan to 70-80°C. Gradually whisk the hot oil into the flour until smooth. Add 60 grams of milk, 3 egg yolks, and 2.5 ml of vanilla extract to the mixture. Whisk until a smooth dough forms.

In a clean bowl, combine 3 egg whites, 2 grams of lemon juice, and 50 grams of sugar. Beat the mixture with a hand mixer until soft peaks form. Gently fold the meringue into the dough in batches until fully incorporated.

Line a 15 cm (7-inch) cake pan with parchment paper. Pour half of the cake batter into the pan. Place 3 slices of cheese evenly over the batter. Pour the remaining batter on top, ensuring the cheese is fully covered.
