Directions
1. Step
In a mixing bowl, combine the flour, baking powder, cold butter, egg yolks, sugar, and a pinch of salt. Mix until a smooth dough forms.
2. Step
Roll out the dough to an even thickness and cut it into 7 cm shapes using a cookie cutter. Let the shaped dough rest for 10–15 minutes.
3. Step
In a clean bowl, whisk the egg whites with vanilla sugar, sugar, and lemon juice until stiff peaks form. Transfer the mixture to a piping bag or a paper cone.
4. Step
In a small bowl, mix the cherries with cornstarch to help absorb excess moisture.
5. Step
Place a cherry on each biscuit. Pipe the meringue mixture over the top in a decorative pattern. Bake in a preheated oven at 150°C (300°F) for 15–20 minutes or until lightly golden.
6. Step
Once the biscuits have cooled, drizzle melted chocolate over the top using a piping bag or a paper cone.
