Directions

1. Step

Drain the water from 210 g of tofu. Cut it into two halves. Microwave one piece for 1 minute to heat it through.

2. Step

Finely chop the green onion and half of the onion. Separate the two egg yolks into separate bowls. Add a little vinegar to the egg white to prevent breaking, then mix well. Beat the egg yolks and pour into a hot pan. Let it cook until the edges curl, then flip it over and cook the other side. Set the cooked eggs aside.

3. Step

Microwave the remaining tofu, then place it in a hot pan. Use a slotted spoon to break it apart and cook until the moisture evaporates. Once the tofu is lightly fried and most moisture has evaporated, set it aside in the pan. In the same pan, add a little oil, then sauté the chopped green onion and garlic paste. Add the chopped onion and sauté lightly. Add the tofu back to the pan, mixing with the onions and green onions, and fry together.

4. Step

Push the tofu mixture to one side of the pan. On the other side, add 1 tsp soy sauce, 1/2 tsp oyster sauce, and 1 tsp sugar. Stir to combine, then mix it with the tofu and fry together.

5. Step

Arrange the lettuce leaves in a bowl, folding each leaf in half and then in half again to create small bowls. Add 1 tablespoon of the fried tofu mixture into each lettuce bowl. Roll up the fried egg, slice into small rounds, and place them on top of the lettuce bowls. Serve the dish warm, and enjoy your delicious tofu lettuce wraps!
